I think Rick created “human cloaking device” Morty and left him to grow to a useful age with his family, implanting them with fake memories.

Morty exists as a baby in Ricks memories & memorabilia, but he’s apparently been absent from Beths life during that time.

Beth & Jerry wouldn’t have a second child if they weren’t together. So Morty isn’t actually their child.
I think Morty is Ricks “cuckoo egg”

Summer is the older child, so Morty was born after her. But there are a LOT of Mortys.

It’s established that there’s not many realities where Summer exists, ergo where Beth didn’t have the abortion & stayed with Jerry.
